Mean Jean's Famous Cranberry Chicken Salad

1 Whole Chicken (Deli Broasted or Wonder Roast works well) Deboned,cooled and shredded

3/4 cup Chopped Celery

3/4 cup Chopped Onion

1 cup Dried Cranberries

1/2 cup Roasted Silvered Almonds


Mix together and add dressing*


*Mean Jean Mustard Cranberry Dressing

1/2 cup Mayo

1/4 cup Mean Jean's Cranberry Mustard


Salt and Pepper to taste.

Serve on a bed of fresh lettuce, with crackers,on a nice Deli roll- your choice!

Apple Cranberry Salad Toss

Makes 8 Servings


1 Head of Lettuce

2 Apples- cubed

1/2 cup Chopped Walnuts

1 cup Dried Cranberries

1/2 cup Sliced Green Onion

3/4 cup Mean Jean Cranberry Vinaigrette (see Vinaigrette Recipe)


Toss ingredients in a large bowl.

Add dressing, toss to coat and serve immediately.

Cheesy Jalapeno Corn Bread


1 cup sifted all purpose flour

1/4 cup sugar

4 tsp. baking powder

3/4 tsp. salt

1 cup yellow cornmeal

1/2 cup Mean Jean's Hot Jalapeno Mustard

1/2 cup pepper jack cheese- shredded

1 bunch green onions- finely chopped

2 eggs

1 cup milk

1/4 cup shortening


Sift all dry ingredients together.  Add the remaining ingredients. Stir until just smooth.  Pour into greased 9x9x2 inch pan. Bake at 425 degrees for 25-30 minutes.

Mini muffins- bake for 8 minutes

Mean Jean's Hot Jalapeno Pasta Salad


1 lb.of favorite pasta- cooked, drained and cooled

1/4 cup fine chopped celery

1/2 cup fine chopped onion

1 grated carrot

1/2 cup chopped tomatoes

1 fine chopped green pepper


Mix together- add dressing*

1/2 cup Mean Jean Hot Jalapeno Mustard

1/2 cup Mayo

3 Tablespoons Vinegar

2 Tablespoons Extra Virgin Olive Oil

Salt and Pepper to taste

Serve Cold
